Yes, I said exciting- I know it’s hard for most of us to think of a salad as exciting, but I promise you’ll find this exciting. The hint of spice from the grilled peaches, the tangy, salty bite from the crumbled feta and the sweet, sprightly coolness from the fresh mint leaves brings out the perfect balance in this fruity salad. Hot summer days are making way for cooler fall days as I write this, but I’m holding on dearly to whatever is left of the summer and everything summery, like this refreshing recipe, for as long as I can.

Watermelons and I have a love-hate relationship. During grad school, especially during summers, watermelons were our go-to dinner. They need no prepping, cooking or cleaning up afterward. Slice it up and eat. Dinner done in five minutes. So easy that we kept eating it for days on end. So, after we were out of college, I thought I was done with watermelons too. But just as summer hits again, my craving for watermelon comes right back. Crushed watermelons with lemon, mint and a pinch of salt and pepper or a watermelon salad for a mid-afternoon snack are always refreshing and a quick fix for some must needed summer hydration.

Watermelon and grilled peach salad!

Ingredients:
 3 yellow peaches, sliced
 ½ small watermelon, cubed
 1 cup cherry tomatoes, cut into half
 8 mint leaves
 ½ cup feta cheese
 ¼ tsp paprika
 salt
Dressing:
 2 tbsp balsamic vinegar
 1 tbsp olive oil
 2 mint leaves, crushed
 1 tbsp lemon juice
 ¼ tsp pepper
 salt

Directions:
1

Slice the peaches and add in the paprika and salt. Toss them well together.

Mix all the ingredients for the dressing.

Grill the peaches till you see nice grill marks.

Combine the cubed watermelon, cherry tomatoes, grilled peaches and mint.

Add in the dressing to the salad.

Sprinkle the feta cheese all over.
