Flaky puff pastry with egg and ham!

Yes, I still have a lot of puff pastry sheets from my Covid panic buying. It is a convenient ingredient to have in your freezer to make easy, delicious recipes when you have unannounced guests. Since we don’t have friends coming over these days, I still have puff pastry sheets and decided to make these for our Sunday brunch. Like everyone else, we’re trying to limit the grocery trips to once per week and we run out of snacks fast. Why go out during the pandemic when you can make delicious buttery and flaky puff pastry dishes for breakfast or just for snacking!

This recipe uses ingredients which are almost always available in your kitchen. It will be ready in under 30 minutes. You can swap ham with turkey, and cheddar with mozzarella or any other cheese that you like or have handy. This can be a dish on your brunch table or you can make these as a snack for picnics.

Ingredients:
 3 boiled eggs
 9 ham slices
 2 cups cheddar cheese
 1 tbsp dried parsley
 1 sheet puff pastry
 1 egg, beaten
 Salt
 Pepper

Directions:

Preheat oven to 400 F.

Cut puff pastry sheets into 5” * 5” squares

Cut each boiled egg into 4 quarters.

Place the puff pastry squares on a parchment paper lined baking tray.

Brush them with egg wash, spread cheddar cheese diagonally, place folded ham on top of the cheese and place one piece of egg on top.

Sprinkle with salt, pepper and dried parsley.

Close the edges and place a toothpick to make sure everything stays in place.

Brush the top and sides with more egg wash.

Bake for 10-15 minutes or until golden brown.
