Yummilicious no-bake strawberry cheesecake

These are no-bake cheesecake filled strawberries covered in chocolate and cookies! These are perfect for birthdays, parties, celebrations and holidays. These are a crowd favorite, kids and adults will love this equally. Think strawberry cheesecake without any of the baking. These are perfect for your fourth of July party. Top them with a blueberry on each, and you get your red-white-and-blue!

You can prepare the cream cheese mixture ahead of time and store it in the refrigerator in a Ziploc bag. Take it out when you're ready to assemble. The recipe works best with firm plump strawberries. Once assembled, serve immediately or refrigerate until ready for serving. You can store leftovers, if any, in a sealed plastic container in the refrigerator for another day.

You can make different variations by skipping the chocolate & cookies mixture or the cream cheese stuffing.
I’ve already explained the process to melt chocolate in my biscotti recipe. For your convenience, I’m including it below.

P.S. My husband chased each strawberry with a mint leaf that I used for garnishing. He loved the mix of flavors so much so that he insisted I put a note about it.

For melting chocolate: 
Saucepan Method:
Place 4-6 ounces of the chocolate chips or finely chopped chocolate in a heatproof bowl (use separate bowls for dark and white chocolates) and place it over a saucepan of simmering water. Once the chocolate has melted, remove from heat and stir with a wooden spoon until it has completely melted.

Microwave method:
Place the chocolate chips or finely chopped chocolate in a microwave safe bowl (use separate bowls for dark and white chocolates) and microwave for 30 seconds (or 20 seconds if at a high setting) then take the bowl out and give it a stir. Place the bowl back in the microwave and repeat the process, stopping, stirring and repeating until the chocolate has completely melted.

Ingredients:
 20 fresh strawberries
 6 oz cream cheese, room temperature
 ¼ cup confectioner’s sugar
 ½ tsp vanilla extract

 1 cup semi-sweet dark chocolate chips
 1 cup milk chocolate chips
 15 Oreos (separate the cream and cookies) 

 10 Graham crackers

Directions:

Wash and dry strawberries. For best results, use firm plump ones. Cut off the tops and carefully hollow out the inside with a paring knife. Keep them aside.

In a stand mixer or using a hand mixer, beat the cream cheese and Oreo cream on medium speed for 3-4 minutes until the cheese is fluffy and smooth. Add in the confectioner’s sugar and vanilla and beat until combined.

Melt the chocolate using one of the methods mentioned above.

Crush the graham crackers and Oreo cookies in separate Ziplocs using a rolling pin. Alternately, grind them separately, into a fine powder using a food processor.

Dip the bottom half of the strawberry in the melted chocolate. Roll the chocolate covered portion of the strawberry in the crumbled Oreos/graham crackers. I used half the strawberries for milk chocolate-n-Oreos and the other half for dark chocolate-n-grahams.

Place them on parchment paper for drying.

Once dried, fill each strawberry with the cheesecake filling using a spoon, knife, or a piping bag.
