Orange chocolate cake spiced with cardamom

Ingredients:
Bowl 1:
 1.50 cups all purpose flour
 3.90 oz instant chocolate pudding mix
 1 tsp cardamom powder (freshly grounded, for the best results)
 ½ tsp baking powder
 ½ tsp baking soda
 ½ tsp salt
Bowl 2:
 3 eggs
 1 cup sugar
 1 tsp vanilla extract
 2 tsp orange extract
  cup fresh orange juice
 2 tsp orange zest
 ¾ cup vanilla/ plain Greek yogurt
 ½ cup oil
Frosting:
 3 tbsp softened butter
 1.50 cups powdered sugar
 4 tbsp fresh orange juice
 1 tsp orange extract
 A pinch of cardamom powder

Preheat oven to 350 degrees. Spray a 5 x 9" loaf pan with non-stick baking spray, line it with a piece of parchment paper and set aside.

In bowl 1, combine the flour, pudding mix, baking powder, baking soda, and salt.

In bowl 2, combine the eggs, sugar, cardamom powder, vanilla, orange extract, orange juice, orange zest, oil and yogurt with hand mixer. Mix until evenly combined.

Gradually add the dry ingredients from bowl 1 to this mix, scraping down the sides of the bowl in between.

Pour the batter into the prepared loaf pan. Bake for 50-55 minutes, or until a toothpick inserted comes out clean.

After baking, let cool in the pan for 5-10 minutes. Remove from the pan and cool completely on a cooling rack.

Frosting: Combine the butter, orange juice and orange extract with hand or stand mixer. Gradually add cardamom powder and powdered sugar, and beat until smooth and creamy. Spread the frosting evenly over the top of the loaf. Refrigerate to set the frosting completely before slicing.
